At Amasar, a Puerto Rican company that’s turning an ancient island staple into a modern the bustling Supply Side Global show in Las Vegas, I sat down with Marisol Villalobos, nutritional powerhouse. Her energy and passion for sustainable farming were infectious as she introduced me to a tropical marvel called breadfruit.

“Breadfruit is a superfood that’s been in Puerto Rico for more than 200 years,” Marisol explained. “It’s naturally gluten-free, non-GMO, and packed with fiber and protein.” Brought to the Caribbean centuries ago from Polynesia, breadfruit has quietly nourished island communities ever since. Now Amasar is bringing it to the world in the form of nutritious, clean-label flour that’s both versatile and delicious.

A former educator and breastfeeding counselor, Marisol’s journey began with a simple goal: to feed her family better food. Together with her husband — a chemical engineer — she built Amasar from the ground up. What started as an experiment on their farm has grown into a 12-acre operation with more than 550 breadfruit trees, sourcing from over 30 local farmers across Puerto Rico.

Amasar’s products include all-purpose breadfruit flour, a pancake mix that won a Sofi Award, and a high-protein blend designed for health-conscious eaters. The flour works beautifully for pancakes, waffles, brownies, and even crispy gluten-free fried chicken. “People can’t believe it’s gluten-free,” Marisol laughed. “It tastes that good.”

Beyond baking, breadfruit adds richness to soups, gravies, and desserts. Marisol even makes flan using the flour instead of cream cheese, creating a creamy, flavorful treat that’s both lighter and naturally gluten-free.

For Marisol, Amasar is more than a business — it’s a mission to honor Puerto Rico’s agricultural heritage and promote food security through local farming. As she put it, “We’re rediscovering what our ancestors already knew: breadfruit can feed the world.”
